Bohemia wins top dessert award

Friday 28 November 2014

Michelin star Bohemia Restaurant is among the top ten places in the British Isles to eat dessert after one of its puddings made the Sunday Times Food List 2014.

Pastry Chef Ellen de Jager made the winning pudding using malt ice cream and a whiskey cocktail puree, and decorate it with a little gold leaf for a touch of luxury.

She said: “We like to create desserts around the seasons, therefore the inspiration for our winning dessert was to create something Autumnal that would make you feel warm inside, so we created a whiskey, coffee and malt pudding.

"The Whiskey pudding is a layered dessert consisting of a crunchy toasted hazelnut praline base, followed by a coffee chocolate mousse, beneath a sharp whiskey and lemon jelly. A third layer of creamy malty chocolate mousse is layered on top, and to finish off we spray it with a Burgundy colour cocoa butter using an air spray gun."

"We then make a malt ice cream and an old-fashioned whiskey cocktail puree, and decorate it with a little gold leaf for a touch of luxury.”
