Healthy, hearty and easy to put together... this is a breakfast that ticks all the boxes.

For this week's Charity Chomp, Beresford Street Kitchen has shared one of their most popular bites, which consists of avocado, smoked salmon and a poached egg on toast.

"This recipe is a best-seller on our breakfast menu and all the chefs enjoy making it," the team said.

"There are options with this dish, you can substitute the smoked salmon with bacon, ham or remove it completely to give a vegetarian option, we love diversity here!"

(serves two)

Avocado, Smoked Salmon and a Poached Egg


Ingredients

  • One large or two small avocados

  • Two slices of smoked salmon 

  • Two eggs

  • Half a lemon

  • Handful of mixed seeds

  • Chopped chilli (optional)

  • Two thick slices of crusty bread

  • Salt and pepper

Method

  1. Scoop out the avocado flesh and put in a bowl with the juice of the lemon, seeds, and chopped chilli if using.

  2. Mash them all together and season with salt and pepper to taste.

  3. Poach or fry the egg, whichever you prefer.

  4. Toast the bread and put on a plate, spread the avocado on the toast, add a slice of smoked salmon then top with the egg. Sprinkle with more chilli (optional) and serve.
