Charity Chomp: "Curiously tasty" bobotie

This week's recipe is a traditional sweet and savoury South African dish consisting of minced beef mixed with raisins, apricot jam and fruit chutney.

The bobotie recipe was shared by Minnie Theron for Jersey Action Against Rape's for their 'Recipe and Walk' book, which brings together islanders' favourite tasty treats and whimsical walks.

"This national South African dish is a curiously tasty mixture of sweet and savoury, a legacy from the Malay cooks who adapted oriental recipes and used local ingredients to create a new and unique culinary tradition," Minnie explained.

"Being South African myself, my mother used to make this often as I now do for my kids."

The dish takes about 20 minutes to prepare, and its cook time is around 25 minutes.

(Serves four)

Minnie's Bobotie

Ingredients

  • 500g minced beef

  • 1 slice white bread 125ml milk

  • 1 small onion

  • 60g raisins

  • 60g flaked almonds Tablespoon apricot jam Tablespoon fruit chutney Tablespoon lemon juice Chopped mixed herbs

  • 2 teaspoons curry powder Teaspoon turmeric

  • Salt

  • Oil

  • 2 small eggs

  • Bay leaves

Method

  1. Soak bread in half the milk. Squeeze dry and mix with the beef.

  2. Mix in all the other ingredients except remaining milk, oil, eggs and bay leaves.

  3. Heat oil in frying pan and brown meat mixture lightly.

  4. Turn into a casserole. Press down. 

  5. Beat eggs with remaining milk and pour over meat.

  6. Garnish with bay leaves.

  7. Bake at 180 until set.
