Charity Chomp: A gloriously naughty pudding

With some dreary weather announced for the weekend, a deliciously sticky toffee pudding is sure to warm your cockles!

This week's Charity Chomp is brought to you by Beresford Street Kitchen, which helps people with learning disabilities into paid employment in its café network.

The team described this pudding as "the naughtiest of their desserts".

"You have to treat yourself now and then!" they added.

They have shared the recipe for the accompanying caramel sauce but if you prefer not to make it yourself, you can buy a jar from your local supermarket, heat it and pour it over.

(serves four)

Sticky Toffee Pudding with Caramel Sauce

Ingredients:

  • 50g soft brown sugar

  • 85g self raising flour

  • 60ml full fat milk 

  • One small egg

  • One tsp vanilla extract

  • 25g butter

  • 100g of chopped dates

For the caramel sauce:

  • 125g caster sugar

  • Two tbsp water

  • 75ml double cream

  • 25g butter

  • Vanilla ice cream or cream to serve

 

 Method:

  1. Preheat oven to 180c.

  2. Butter a small square baking tin.

  3. Mix the sugar and flour in a bowl.

  4. Beat the milk, egg and vanilla extract in a separate bowl.

  5. Melt the butter and add to the milk mixture.

  6. Pour the milk mixture into the sugar mixture and stir well.

  7. Add the dates and stir again, then pour into the buttered tin.

  8. Put into the oven and bake for 45 minutes. You can check the cake is cooked by sticking a skewer into the middle, if it comes out clean, the cake is cooked.

  9. Once the cake is baked, remove from the oven and leave for a few minutes.

  10. In a small saucepan, heat the sugar and water over a medium heat until the sugar dissolves. Be very careful not to let the sugar burn, stir all the time.

  11. Remove from heat, add butter and cream and mix well.

  12. Slice the cake into four, put each slice in a bowl and pour over the caramel sauce.

  13. Serve with either vanilla ice cream or cream.
