The new Flour shop opened on Friday 10 November, with a steady flow of curious visitors particularly excited to try the shop’s new brunch options.

Jersey-born owner Kirstie Taylor was educated at Cordon Bleu – one of France’s top cooking schools.

“I was at university in London doing fashion photography,” she explained.

“I thought to myself: I could see myself getting a job going back to my love of baking.”

Kirstie then enrolled on the pastry course, which she described as “probably the most intense learning process I’ve ever had”.

On coming back to Jersey, she opened the Flour market stall in 2016.

Building a loyal following at the market, Kirstie grew her business but always had an eye on having a permanent shop with a menu extending beyond cakes.

She explained: “We have been there a while now, coming up to eight years.

“It had always been my goal to have a full menu… I didn’t want to wait until I was too old to do this huge, stressful thing.

“If it’s not going to be now, then when would I do it?”

Now, she and her chef have created a menu that changes seasonally with the aim of using local, seasonal ingredients.

With ten staff members – as well as her mum, who does the dishes – Kirstie said she had “a very strong team”.

She chose the booths, menu and decor herself – saying this could be the island’s “most Instagram-able” café.

“It’s exactly what I had imagined!” she said.
