This goat’s cheese crouton with a balsamic glaze is the perfect recipe if you are looking to make use of some leftover bread…

(Serves two)

Goat’s cheese crouton with a balsamic glaze

Ingredients

  • Two slices of thick crusty bread 

  • Goat’s cheese log 

  • Salad leaves 

  • Cherry tomatoes cut in half

  • Balsamic glaze (shop bought is fine)

 

Method:

  1.  Heat grill to high. 

  2.  Slice two thick slices of goats cheese. 

  3.  Put the bread under the grill and grill until lightly toasted on each side, remove from grill. 

  4.  Put the goats cheese on top of the bread and cut around so the bread is the same size as the goats cheese. 

  5.  Put the goats cheese and its crouton under the grill and toast until the goats cheese turns a nice golden colour without burning.

  6.  Arrange the leaves and cherry tomatoes on the plate and place the goats cheese crouton on top, drizzle with the balsamic glaze and serve.
