Some of Hand Picked Hotel’s corporate clients proved they were master chefs in an exciting cook-off at L’Horizon Beach Hotel & Spa recently.

The winners in team ‘Bouley Bay’ were amongst ten teams challenged to create a gourmet dish in just thirty minutes.

Andrew Soddy, Executive Head Chef at the AA Four Red Star beachside hotel in St Brelade started the evening with a demonstration of how to cook Atlantic Hake Ceviche with crab mayonnaise and pickled cucumber.

Once the teams had digested all his tips, they had to race off MasterChef style to a specially created ‘larder’ and collect all the ingredients needed to make the dish.

Then it was time to work together and transform their ingredients into quality plates of food before being judged by Andrew on their presentation and flavour.

Commenting on the masterclass, Andrew said, “I was really impressed with how the teams worked together with one person getting the ingredients, one cutting the vegetables, one slicing the fish. It was very competitive but great fun and they all did an amazing job with the dish given they’d never made it before!”

It was then the teams’ turn to tuck into some tasty finger food including lamb and feta sliders with pickled red cabbage, hot salmon niçoise, soya glazed pork belly, scallops and apple and crispy tofu with chilli charred tenderstem and rice noodle stir fry.

Dessert included chilli chocolate ganache and lemon posset with lavender honey gel and everyone got to take home some homemade biscuits.

Andrew will be running his masterclasses throughout the summer, the perfect recipe for corporate events, get togethers or even hen or stag parties.

He offers a seafood platter masterclass where teams ‘catch a lobster’ before making one of his signature lobster dishes. Meanwhile his Local Gems masterclass introduces budding chefs to Jersey Bean Crock (Les pais au fou), the Island’s traditional dish, served with cabbage bread.

L’Horizon Cookery Demo and Masterchef experiences can be booked at a cost from £40.00 per head.
