The Atlantic Hotel appoints Will Holland as new executive chef

The Atlantic Hotel has appointed a new executive chef at the award-winning Ocean Restaurant to replace Mark Jordan, who is standing down at the end of the season.

Will Holland will join the hotel in October from Coast Restaurant in Pembrokeshire, Wales, where he is head chef. Mr Holland has worked in Michelin-starred restaurants since the age of 18 and was awarded a star before he was 30.

‘We are thrilled to be welcoming Will to our team in October. There was a great deal of interest in the position from some of the finest young chefs in the country, however Will was the stand-out candidate and we are delighted to have secured him,’ said Patrick Burke, managing director and owner of The Atlantic Hotel. 

‘We have great admiration for everything that Will has achieved in his career to date and have no doubt his appointment will further strengthen Jersey’s growing culinary reputation.’

Mr Holland has worked in some of the finest establishments across the UK, including La Bécasse Restaurant, L'Ortolan Restaurant, Gravetye Manor Hotel and Homewood Park Hotel. He is recognised by The Good Food Guide as one of its predicted 10 most influential chefs of the next decade and was named UK Restaurant Chef of the Year 2016 by The Craft Guild of Chefs.

Coast Restaurant, launched by Mr Holland and his team, was awarded 2 AA Rosettes just five days after opening in 2014 and won AA Restaurant of the Year for Wales in 2015. With a relaxed vision of good food, Mr Holland’s menus focus on celebrating the finest British ingredients.

‘Journeying from coast to coast to join The Atlantic, Will brings with him his desire to work with local producers to source high-quality ingredients, an approach Ocean Restaurant has long championed in its mission to help put Jersey on the map as a gourmet destination,’ said Mr Burke.

After 14 successful seasons at The Atlantic Hotel, Mark Jordan will remain at the helm of Ocean Restaurant until the close of the summer season at the end of October. Mr Holland will complete the summer at Coast before joining The Atlantic Hotel in the same month.
