Guests at L’Horizon Beach Hotel & Spa tucked into a delicious ‘pink’ themed spread last month and helped raise £1,200 for Islanders battling breast cancer.
Andrew Soddy, Executive Head Chef and his talented pastry team at the AA Four Red Star beachside hotel in St Brelade prepared the special afternoon tea, which included a mouth-watering combination of savoury finger sandwiches from whipped goats cheese, beetroot and cranberry to smoked salmon, cream cheese and cucumber on pink beetroot bread.
Along with freshly baked scones with Jersey clotted cream, strawberry jam and lemon curd, there was a whole host of other pretty pink sweet things to tantalise the taste buds including raspberry macaroons, pink velvet Victoria sponge and baked rhubarb and custard cheesecakes.
The mouth-watering menu, available every weekend throughout October’s Breast Cancer Awareness month, helped raise funds for After Breast Cancer (ABC). The local charity supports Islanders battling cancer, both emotionally and financially, assisting with the cost of flights for appointments or treatment in the UK, helping with childcare costs, cleaning and ironing services, covering the cost of wigs, lymphoedema sleeves, tattooing after reconstructive surgery, post operative bras and a 12 step Fitness programme.

Andrew’s team really excelled themselves, dishing up a fabulous feast which proved so popular we smashed last year’s fundraising total and raised hundreds more for this fantastic charity.”
