Tassili at Grand Jersey Hotel & Spa are hosting an exclusive vegetarian evening on Saturday 29th September to celebrate World Vegetarian Day.
Nicolas Valmagna, Executive Chef at the AA Five Star St Helier hotel and his team have created a special sevencourse tasting menu to showcase the very best of fine vegetarian dining using some unique local ingredients.
Diners will start by foraging through this special menu with some Jersey sea vegetables, saltwort, velvet horn, pepper dulse, sea purslane and sea bean.
Jersey heritage beetroot and a beetroot sorbet will cleanse the palate before the culinary adventure continues with some forgotten vegetables including Jerusalem artichoke, salsify, horseradish and black garlic purée.
Next is a tasting of wild mushroom which includes pied bleu, trompette, truffle, girolle and chanterelle while seasonal blackberries feature in the delicious dessert which sees a pistachio sponge combined with a white chocolate crumble, panna cotta and yogurt sorbet.
The dishes wouldn’t be the same without the fantastic vegetarian wine pairing which has been carefully selected by Tassili’s Restaurant Manager to ensure guests have the ultimate vegetarian experience.
Commenting on his menu, Nicolas said, “We’re very excited about this meat-free feast. We’ve had a great adventure working with some fantastic and unique local ingredients to create this menu and showcase vegetarian food and I hope it will be a wonderful taste sensation for our guests.”
World Vegetarian Day was established by the North American Vegetarian Society (NAVS) back in 1977 to help promote the vegetarian way of life and to give people the opportunity to explore the world of meat-free cuisine.
The veggie feast is available for £65 per person which includes a glass of Champagne and canapés on arrival.
