Charity Chomp: Here 'crumbs' a batch made in heaven

Looking for an easy-to-make afternoon snack? Here 'crumbs' a delicious recipe courtesy of Beresford Street Kitchen.

For this week's Charity Chomp, the café with a conscience, which helps people with learning disabilities into paid employment in its café network, has shared the recipe for their oat and raisin cookies.

With simple ingredients and easy-to-follow instructions, you'll have a delicious batch of cookies to dunk in your cup of tea in no time.

(Makes 15 to 20 biscuits depending on size)

Oat and Raisin Cookies

Ingredients:

  • 180g butter 

  • 180g brown sugar 

  • 180g plain flour 

  • 170g oats 

  • Three tablespoons honey 

  • One and a half bicarbonate of soda 

  • 50g raisins (or chocolate chips if you’re feeling naughty) 

Method:

  1.  Preheat oven to 180c. Grease a large baking sheet. 

  2.  Over a medium heat melt butter and honey. Remove from the heat and stir in bicarbonate of soda 

  3.  Mix the sugar, oats and flour in a bowl and pour over the liquid. 

  4.  Mix everything really well and leave to stand for a few minutes.

  5.  Spoon out a dollop of mixture onto the baking tray and press down gently into a biscuit shape. 

  6.  Repeat until the tray is full, leaving a small gap between each biscuit. 

  7.  Bake for 10 to 15 minutes until a nice golden colour. Serve with a nice cup of tea, they are great for dunking.
