A local cookie company which has so far been operated from its owner's kitchen is set to expand into a Central Market shop this summer after years of temporary pop-ups.

Born out of lockdown in 2020, Dough Jersey is owned by husband-and-wife duo Chris and Ruby Price.

The company – which specialises in "the perfect cookie recipe" using Jersey produce – is set to open a permanent shop in the Central Market this summer.

"This is my baby and my dream," said Ruby, who left her job in banking in 2021 to run the cookie company full-time.

Dough Jersey will be making unit 90 its new home. The Central Market stall most recently hosted patisserie Flour – which itself expanded into a dine-in shop at Colomberie last year.

Ruby explained that Dough Jersey has previously been operated from her home kitchen, using a "cookie cart" to sell their goods at pop-ups and private events.

"Our pop-ups were so good," she said.

"The queues were crazy, which showed us the demand is there [for a permanent shop] and gave us the confidence to take that leap."

Ruby explained that the Central Market was an ideal choice for Dough Jersey's new venture due to plans to regenerate the space into a “social and commercial hub”.

"The Market is being revitalised at the moment and I think that fits well in our branding," she said.

"We think it works really well. Though it has a small shop front, underneath is a huge cellar which lends itself well to make and store enough dough."

Ruby revealed that Dough Jersey's new shop will also provide the option of a speciality coffee to pair with the cookies, and may branch out into other baked goods in the future.

For those eager to get the shop's opening date in the diary, Ruby said: "I don't want to jinx anything but we hope to be open by the beginning of July!"
