Shaun Rankin is set to open his first restaurant in London showcasing Jersey produce to international business travellers.
The Michelin-starred chef will be running the catering side of 12 Hay Hill, a new members’ club based in London’s Mayfair.
Diners will be treated to dishes featuring Jersey lobster, crab and oysters, Jersey Royals from the Island’s smallholders, hand-dived scallops from Jersey’s spectacular shoreline and foraged herbs handpicked from coastal cliffs.
A number of the Island’s best suppliers such as Louis Jackson, from The Fresh Fish Company, Jamie Racjan, from Fungi Delecti, Chris Le Masurier, from Jersey Oyster, Joe Freire, from Jersey Asparagus and Jersey Dairy are also set to benefit from the partnership.
Shaun will continue to run Ormer, his flagship restaurant which received a Michelin star just four months after opening in Jersey last year. The chef previously worked at Bohemia, where he held a Michelin star for seven years.
He said: “12 Hay Hill is an exciting proposition and an important milestone for me. My intention has always been to expand the business portfolio whilst generating a wider market for Jersey produce. The Hay Hill management team have totally embraced the island-inspired philosophy and I am thrilled to showcase my best suppliers to their members in the heart of Mayfair.
“I hope that the profile gained in London will also be beneficial to Ormer, which will remain my flagship restaurant. I hope to see a real synergy between the two locations and know that a number of my Channel Island diners will be using 12 Hay Hill for business in London.”
Facilities at 12 Hay Hill will include offices, a gym, the main brasserie, a deli-style basement bar and alfresco dining on a terrace overlooking Berkeley Square. Office space at the club is expected to open February 2015, with the restaurants and bar following in March 2015.
