A restaurateur who’s run a successful local family business for the past 20 years says the key to success is simple.
Natalie Duffy, owner of the Salty Dog in St Aubin, and vice president of the Jersey Hospitality Association, says ingredients are the key.
She says for the past two decades the restaurant has been serving classic cuisine with a twist. “We have seen many changes in the industry over the past 20 years; however, we remain true to our core values. We serve the freshest ingredients available, sourcing local produce as much as we can. It’s all about quality produce, contemporary cooking, great value and professional service.”
She says it's important the industry and those promoting the island work hand in hand, but the States also need to help. “Visit Jersey are doing a great job in marketing Jersey as a destination. It’s our role in the hospitality industry to deliver on their promises and provide our visitors with the best experience when they arrive in Jersey. We hope the new States Assembly will support the industry and make hospitality part of their strategic focus for the next four years. Without this support, which includes allowing the sector to source, train and recruit staff from both local and off island, the industry is in danger of not meeting standards.”
