She's the eco chic-loving foodie behind the hottest new sustainable restaurant in town... So what does she eat and drink to wind down?
Zara Kramer opened The Pavilion Restaurant in St. Helier in September 2022.
"Having come to see my husband’s family at the start of lockdown in March 2020, we couldn’t see ourselves going back to London," she explained. Since then, the couple has not only had baby, but also opened the new eatery in the space previously occupied by Henley's behind Liberty Wharf.
With a background in environmental impact and sustainability, Zara has worked with several brands to help them understand and reduce their environmental impact, a knowledge which she has applied to The Pavilion to have minimal impact.
"Sustainability isn’t just a job for me (though I do still consult for Sony PlayStation one day a week alongside The Pavilion), it’s a belief and its factored into every aspect from the design, to the way we employee people, to the materials we build the restaurant with and of course coursing food locally and seasonally," she explained.

Just eat full stop! My husband and I are massive ‘foodies’, your as likely to find us hunting for the freshest truffle pasta as you are wolfing down a burger in a local pub. Eating is a huge release for me. Food is pretty much the first thing I think about in the morning, and the last thing at night.
A VERY large (home measures) gin and tonic, or a large cold glass of Oaky Chardonnay. I’m currently expecting my second baby, so as these are off limits I’m very into freshly squeezed juices, or smoothies which I try and get as many nutrients in as possible for the baby.
A podcast, any podcast. I’m commonly pulled up for starting a sentence “I heard on a podcast!” Currently I’m listening to 'Story of a CEO', Steven Bartlett but I also love more relaxed listens such as Jessie Ware’s 'Table Manners'.
Tumbleweed sadly on this front. I must make more time for reading.
To really relax at the end of the day, I go for a long slow run. It’s the place I do all my reflecting from the day and honestly there is no better medicine to clear you head than some gentile movement.
Having only moved to Jersey a few summers ago, I’m still determined to get into surfing and sea swimming… Watch this space.
