A Jersey couple has launched a new home-baking business aiming to reviving the traditional flapjack using locally sourced ingredients.
Jersey Jacks, based in St Helier, was founded by Connor Kearney, working with his partner Rebecca Alberici.
He said the idea came from a love of baking and a wish to create something “simple, nostalgic, and sustainably made” using Jersey butter and La Mare’s marmalade.
However, their “key ingredient” is Jersey honey – something the pair hope to be able to make themselves in future.
“We’re also setting up our own hives with Jersey Honey and can’t wait for our first yield next year.”





Currently, the team are looking for a new name for their beehive, and have launched a competition encouraging Islanders to put forward their “punniest” suggestions, with the winner getting an array of Jersey Jacks treats in return.
Each batch is baked, packaged and delivered from their home kitchen, with boxes available to order online for island-wide delivery.
The flapjacks are also stocked at Dunell’s Wine Store, with plans to expand into more local retailers.
Reflecting on their journey to date, the pair said it had been “a true labour of love – and oats!”
