An honesty box selling flapjacks and cookies made with locally sourced ingredients has opened in town.

Jersey Jacks officially opened the ‘Honey Hut’ on David Place on Sunday 17 May.

The honesty box is stocked each morning at around 7.30am with different variations of handmade flapjacks and cookies.

The baked goods are made with local ingredients – including Jersey honey, butter, Hamptonne eggs and more.

The business was founded by Connor Kearney, working with his partner Rebecca Alberici.

Jersey Jacks products are accredited by Genuine Jersey, with the company due to have its first yield of honey produced by its own bees this year.

Connor explained that the honesty box idea came from “wanting to create something a bit different”.

He wanted a space where islanders could “grab fresh, handmade bakes locally without needing to wait or order in advance”.

“I wanted to combine quality homemade products with an honesty-box style concept that feels personal and community-focused,” said Connor.

He explained that the Honey Hut had a “really positive start”.

“The response from the community has been fantastic, and I’ve been overwhelmed by the support,” he said.

“We’ve had lots of repeat customers already, and some days products have sold out quickly, which has been amazing to see so early on.”

Connor said the most popular products so far had been the miso salted caramel flapjacks and the oat and honey cookies.

“Everything is handmade in Jersey using quality ingredients, including local butter and local honey where possible,” he added.

The Honey Hut will be open daily from 7:30am until around 10pm, depending on demand. All products are freshly baked and restocked regularly.

Jersey Jacks products are stocked in other locations, including some Co-op stores, Coffee Republic, The Pantry by Kismet Cabana, Homefields farm shop, or can be ordered for delivery online.
