Tommy Radiguet, who was promoted to head chef at the Don Street restaurant last September, said the videos started as a “bit of fun” to get people interested and excited about local food.

He hopes to create the videos at least once a week, which will be shared on the Government’s Hometime Facebook page as well as his own Instagram account.

Tommy told Express that the videos showcase “exciting” dishes to make with local seafood and fresh produce, and shows islanders what they could do at while “stuck at home” during this “tricky time.”

The chef has so far shared step-by-step videos for cooking a katsu and coconut curry with Jersey lobster, and Coquille Saint Jacques using fresh Jersey scallops.

 

Video: Next up, Jersey lobster coconut curry.

He says in the video: “The island’s gone a little bit crazy for seafood at the moment, so we’re going to show you a recipe for how you can use that in your own homes.”
