A popular St Aubin restaurant is planning to add breakfast, brunch and small bites to its menu at a new location – but not before fixing its extractor fan.

The Salty Dog, which has over the past 25 years become something of an institution in St Aubin, was granted an alcohol licence for its new premises by the Licensing Assembly this week.

The restaurant is due to move to a new venue, 200m down the road from its current location – taking over a building that has, over the years, been home to hospitality venues the St Aubin's Hotel, Blue Fish, Cheffins, Shinzo and, most recently, Trésor.

The Licensing Assembly heard that owner Natalie Duffy was planning on extending the business's offering to customers by introducing breakfast and brunch options, as well as small plates in the afternoon.

Constable Mike Jackson spoke to vouch for Ms Duffy as an experienced business owner and "professional" restauratrice.

Ms Duffy had previously said she hoped to open in the new location by the end of April.

Nevertheless, two parishioners spoke in the Licensing Assembly in favour of stricter hours, arguing that the area was a residential area and that the extractor fan was too loud.

Previous occupant Shinzo had faced legal issues when the extractor fan its owners had put in place was deemed to be too loud.

The parishioners, who had previously spoken out against giving the venue an alcohol licence at a parish assembly, suggested imposing much shorter opening hours on the business. 

The venue's location, in the middle of St Aubin, was "a residential area, primarily", they argued.

However, the court did not see imposing these shorter hours this as necessary.

The Bailiff Sir Timothy Le Cocq said the area has amenities like cafés, shops and a bus stop – amounting to a village.

Ms Duffy, the Licensing Assembly heard, was aware of the issues with the extractor fan, "fully engaged with the resolution of those problems", and would comply with the conditions imposed on the alcohol licence.

The new extractor fan will have to stay at a volume of at least five decibels below the level of background noise.
