Charity Chomp: Sweet 'n' sticky pork rice

Comforting and full of flavour, this pork and veg rice dish is quick, easy, sweet, sticky... and good for charity too.

This week's Charity Chomp comes from Caring Cooks, a charity which provides nutritious food to families across the island, as well as hot meals and cooking education in schools.

The recipe serves two adults or one adult and two young children but you can simply adapt the quantities to feed more mouths.

ALLERGY NOTE: Contains soy and garlic

Marinated pork and vegetable rice

Ingredients

Pork/Marinade

  •  250 g of pork loin (fat trimmed off)

  • Two and a half tablespoons of soy sauce (low salt)

  • 1/4 teaspoon of garlic purée

  • One tablespoon of honey

  • Seasoning: Oil, Garlic purée, Salt and pepper

Vegetable rice

  • 120g of basmati rice

  • One small carrot

  • 40g of sugar snap peas

  • Two spring onions

Method

  1. Prepare the pork (trim off any excess fat), cut into evenly sized strips, roughly the size of your ½ your little finger.

  2. Prepare the listed marinade ingredients into a plastic container, add the strips of pork, mix thoroughly, cover, and refrigerate (for best results, marinade in advance).

  3. Prepare the vegetables: peel & grate the carrot, thinly slice on the angle the sugar snap peas and spring onions.

  1. Cook the rice according to the packet instructions.

  2. Heat the wok/frying pan. Add a drizzle of oil, once hot add the strips of pork reduce the heat slightly to avoid caramelising (keep any remaining marinade left in the container). Once thoroughly cooked remove and put to one side; cover with foil to keep warm. Add 50ml of water to the pan and add the remaining marinade. Boil, and reduce by half. Add all the vegetables, cook for 2 mins, stir add the cooked rice, heat thoroughly.

  3. The pork can be either added into the rice or served on the bed of rice

  4. Ready to serve. Enjoy!
