Here's a healthy – and charitable – take on a classic recipe that is sure to bol' you over.

This week's Charity Chomp has been provided by Caring Cooks, who provide nutritious food to families across the island as well as hot meals and cooking education in schools.

This recipe will serve two adults or one adult and two children.

ALLERGY ADVICE: Contains wheat, garlic, celery, egg and milk.

Pasta Bolognese

Ingredients

  • 150g lean minced beef

  • Half a white onion

  • Half a carrot

  • Half a stick of celeri

  • One tablespoon of tomato purée

  • One teaspoon of mixed dried herbs

  • One teaspoon of garlic purée

  • Half a beef stock cube

  • 50 ml of water 

  • 300g of tinned chopped tomatoes

  • A drizzle of olive oil

  • 150g of dried pasta

  • Two teaspoons of parmesan cheese

Method

  1. Prepare the vegetable – peel and finely dice chop the carrot, celery & onion.

  2. Heat a drizzle of oil in a pan on high heat, add the minced beef and cook stirring for 3-4 mins until the meat is browned all over. Drain off any excess oil.

  3. Reduce the heat to medium add the onions, carrot, garlic, and mixed herbs cook until the vegetables soften.

  4. Add the stock cube, water, tomato puree and tinned tomatoes bring to the boil, reduce to a gentle simmer and cover with a lid. Cook for 45 mins stirring occasionally, until you have a rich, thick sauce.

  5. When the Bolognese is nearly finished, cook the pasta following the pack instructions.

  6. Drain the pasta and stir into the Bolognese sauce. Sprinkle with parmesan cheese.

  7. Enjoy!!!!
