Take your taste buds on a 'gin-spired' adventure with this classic mixer-flavoured cake recipe that's sure to be the 'tonic' to your sweet tooth.

This week's Charity Chomp is brought to you by Jersey Action Against Rape (JAAR), which provides long term counselling and support to survivors of sexual violence.

It was shared by Elizabeth Lee with the charity for its 'Recipe and Walk' book, which brings together islanders' favourite tasty treats and whimsical walks.

Liz said that, being from a family of bakers, had inspired her to bake cakes more often than she should.

"I’m always looking out for interesting recipes and being a gin lover this caught my eye!" she added. "It’s very moist and you can definitely taste the gin and tonic! You can also serve it as a pudding warm."

(Serves six)

Liz's Gin and Tonic Cake

Ingredients

  • 4 medium eggs

  • 2 lemons

  • 8 – 10 shots of your favourite gin

  • (La Mare Gin)

  • Dash of tonic water

  • 150g granulated sugar

  • (Lemon juice, to season if you want

  • more of a bite to the flavour)

  • Weigh the eggs, then measure these

  • ingredients to the same weight:

  • Butter

  • Caster sugar

Method

  1. Preheat the oven to 180C. You will need a lined 1kg loaf tin.

  2. In a mixing bowl add the caster sugar and butter, cream together until light and fluffy.

  3. Add the eggs in and beat the mixture until combined.

  4. Sieve in the flour and add the zest of both lemons and mix.

  5. Next add three to four shots of gin and the juice of one lemon, stir mixture until smooth.

  6. Pour into the 1kg lined loaf tin and place in the middle of over for 35 – 40 minutes, or until the cake passes the knife test.

  7. Place on a cooling rack.

  8. Mix the remainder of the gin, granulated sugar, tonic and the juice from the second lemon in a bowl until you have a consistent mixture. (You can add some extra lemon juice from the cupboard if you love lemons as much as Liz).

  9. Prick the surface of the cake with a fork.

  10. Pour the mixture over the cake and allow it to soak in.
