The new restaurant at Chouet is now taking bookings – with less than two weeks to go before it opens.

Vraic will be located at what was most recently Rocsalt and was before that the Chouet Tea Rooms, on Guernsey’s north-west shore.

The man behind Vraic is Nathan Davies – a Michelin starred chef who has moved to the island from Wales, where he previously led SY23.

He has appeared on the BBC’s Great British Menu for seasons 16 and 17 and he is known for his cooking style that prioritises fire and foraging.

Vraic will be a 25-seat restaurant featuring an open kitchen with a custom-built, fire-driven grill. Mr Davies has previously said its menu will focus on local and British ingredients, with a strong emphasis on Guernsey’s seafood and seaweed.

The seasonal tasting menu on the restaurant’s website confirms this, with seaweed, crab, caviar, lobster, sea lettuce, plankton, bass, turbot, and clams all featuring.

For meat eaters there is also lamb and pork.

The menu costs £145 per person.

The reservations option on the website suggests some time slots are already fully booked with only lunch available on Friday 25 and Saturday 26 July, just days after it is expected to open.

Evening bookings are available during the second weekend Vraic will be open along with lunchtime reservations.
