Vienna Bakery will be filling some of their mince pies this year with apple brandy that’s been maturing in some aged casks at La Mare Vineyard.

The market bakers tried out their new recipe on a few customers last year and they went down a treat.

Owner David Dodge said: “It was very positive. We had them analysed because we were concerned about how much booze was in them but you’d have to eat dozens of pies to take in too much alcohol – most of it comes off during baking as they are baked at 180 degrees so it just leaves the flavour.”

They are also busy baking batches with extra orange and lemon juice and extra sultanas to give their non-alcoholic pies a “zippy zing” and you can get a taste when they go on sale in the Market this weekend.

The partnership is one of many among Genuine Jersey members who often work together to make the most of their produce.
