The Grand Hotel has welcomed a new manager at restaurant Tassili, which was recently awarded Four AA Rosettes.
24-year-old Nicolas Marais will be working closing with Executive Chef Nicolas Valmagna and the Tassili culinary team to create and develop menus using seasonal and local produce as much as possible.
Born in France, Mr Marais has been working in hotels and restaurants across Europe for over five years.
As part of his role, he will also be tasked with developing the restaurant's wine list.

Commenting on his new role, he said: “The quality of the food, personalised service, presentation and the passion of the whole Tassili team is really superb and I’m looking forward to showcasing the outstanding dishes and really engaging with all the diners, while responding to their needs.
“I am also keen to enhance and develop Tassili as a destination restaurant, offering diners some unique experiences including wine and Champagne events and master classes.”
