Pastry Chef Ellen de Jager made the winning pudding using malt ice cream and a whiskey cocktail puree, and decorate it with a little gold leaf for a touch of luxury.

She said: “We like to create desserts around the seasons, therefore the inspiration for our winning dessert was to create something Autumnal that would make you feel warm inside, so we created a whiskey, coffee and malt pudding.

“The Whiskey pudding is a layered dessert consisting of a crunchy toasted hazelnut praline base, followed by a coffee chocolate mousse, beneath a sharp whiskey and lemon jelly. A third layer of creamy malty chocolate mousse is layered on top, and to finish off we spray it with a Burgundy colour cocoa butter using an air spray gun.”
