Meet Diogo and his cocktail…
The Head Bartender at Longueville Manor, Diogo Oliveira, has shared a warming seasonal drink for the 28 December called ‘Gin-gle Bells’.
Diogo, who has worked at Longueville Manor for eight years, explained that his passion for bartending began in Coimbra, Portugal, where he studied Tourism and Hotel Management.
He went on to win ‘Bartender of the Month’ in Portugal in 2016, before heading to Ibiza for a season to hone his craft.

“After all these years, my passion for creating great cocktails and experiences hasn’t stopped,” he said.
“I’m lucky to be part of the Longueville Manor family, where I can keep creating drinks like this year’s ‘Gin-gle Bells‘.”
How to make it…
Ingredients
50ml Peruvian Pisco
25ml Brockmans “Orange Kiss” gin
30ml Champagne
50ml Homemade syrup (cranberries, cinnamon, star anise, cloves, orange zest)
1 bar spoon Fresh cranberry purée (cranberries mixed with sugar).
Dash of lime juice
20ml Aquafaba
Cinnamon smoke bubble (for garnish)
For the homemade syrup:
Roast 8 cinnamon sticks, 18-star anise, and 18 cloves
Boil with 1kg cranberries, 2 litres orange juice, 10 wide strips of orange zest, and 2kg sugar.
Infuse for 24 hours before double straining.
Homemade fresh cranberry purée:
Add 500g cranberries to a pan together with a little bit of sugar.
Stir often until it comes to a boil. Cook for a few minutes.
Blend everything to make a purée and pass it through a sieve.
