Express has partnered with the Jersey Hospitality Association for a new ’12 Cocktails of Christmas’ series, which will showcase festive drinks from bar staff across the island, giving readers the chance to try their favourite seasonal recipes at home.

Created by Pascalyne, the head mixologist at Sumas, the Snowjito combines the zesty notes of lime with the creamy richness of coconut milk, a hint of elderflower, and the subtle sweetness of cranberries.
The bar team said: “The mojito is one of our best-selling cocktails throughout the year but is mainly a summer drink, known for a refreshing combination of sweetness, citrus and herbaceous mint flavours.
“For our festive season this year, we wanted to ‘Christmassy up’ the classic by giving a summer favourite a snowy winter look while still adding more flavour and the team came up with the ‘Snow-jito’ as well as other Christmas-themed drinks for the winter months.”

“It’s already going down a treat with early Christmas dinners,” they continued.
“We hope you enjoy the mojito twist and have as much fun with it as we did making and drinking with colleagues, friends and family alike or even ‘grinching’ it up on your own still a good way to spend a cold evening with plenty of cocktails to keep you warm!”
How to make it
Ingredients:

50ml White Rum (Bacardi)

50ml Coconut Milk (Alpro, not too thick)

½ Lime
-
Dash Elderflower Cordial
-
25ml Simple Sugar Syrup (boiled sugar and water)

50ml Soda Water
-
Handful Fresh Mint Leaves (torn)

Handful Cranberries (fresh or frozen)

Crushed Ice
Directions:

Muddle mint, lime, coconut milk, and elderflower cordial together.

Add cranberries, rum, and sugar syrup.

Top with crushed ice and stir.

Finish with soda water.

Garnish with cranberries, mint sprig, and a sprinkle of icing sugar.
